Today I’m sharing one of my favorite desserts when rhubarb is in season: a Granny Smith Apple & Rhubarb Crisp. The tartness of the Granny Smith apples pairs beautifully with fresh rhubarb, while the buttery oat topping bakes into a golden, crunchy layer that is absolutely irresistible.
This is the kind of recipe that doesn’t need to be fancy. It’s simple, cozy, and made with everyday ingredients. Granny Smith Apple & Rhubarb Crisp
Serves: 8–10
Filling
- 4 large Granny Smith apples, peeled and sliced (about 6 cups)
- 4 cups chopped fresh rhubarb
- ¾ cup granulated sugar
- ¼ cup packed brown sugar
- 3 tablespoons cornstarch
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- 1 tablespoon fresh lemon juice
- Pinch of salt
Crisp Topping
- 1 cup old-fashioned rolled oats
- 1 cup all-purpose flour
- 1 cup packed brown sugar
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- ½ cup (1 stick) cold unsalted butter, cubed
Directions
Preheat your oven to 350°F and lightly grease a 9×13-inch baking dish.
In a large bowl, combine the sliced apples, chopped rhubarb, granulated sugar, brown sugar, cornstarch, cinnamon, nutmeg, vanilla, lemon juice, and a pinch of salt. Stir until all of the fruit is evenly coated, then spread the mixture into the prepared baking dish.
In another bowl, stir together the oats, flour, brown sugar, cinnamon, and salt. Cut the cold butter into the dry ingredients using a pastry cutter, fork, or your fingertips until the mixture resembles coarse crumbs.
Sprinkle the topping evenly over the fruit.
Bake for 50–60 minutes, or until the filling is bubbling around the edges and the topping is beautifully golden brown.
Allow the crisp to cool for about 15–20 minutes before serving. This gives the filling a chance to thicken slightly and makes it easier to serve.
Optional Vanilla Glaze
If you’d like to make it just a little extra special, whisk together:
- 1 cup powdered sugar
- 1–2 tablespoons milk
- ½ teaspoon vanilla extract
Drizzle it lightly over the warm crisp before serving.
