Jenn’s Cozy Taco Soup Recipe

Ingredients
  

  • 1 Pound Ground Beef or Turkey
  • 1 small Onion diced
  • 1 clove Garlic Minced and more if you prefer
  • 1 14 oz can Diced Tomatos Do not drain
  • 1 14 oz can Corn Drained
  • 1 14 oz can Black Beans Rinsed and drained
  • 1 14 oz can Pinto Beans Rinsed and drained
  • 1 Jar Chuncky Salsa
  • 3 cups Beef or Chicken Broth
  • 1 tsp Cumin Optional
  • Salt and Pepper To taste

Optional Toppers

  • Grated Chedder Cheese
  • Mashed Avacado
  • Sour Cream
  • Totilla chips
  • Green Onion Chopped
  • Lime

Instructions
 

  • In a large soup pot, brown the ground beef with the diced onion over medium heat.
  • Stir in the minced garlic and taco seasoning. Let it cook another minute or two.
  • Add the diced tomatoes, corn, black beans, pinto beans, salsa, and broth.

  • Reduce the heat and let it simmer uncovered for about 20 minutes, stirring occasionally.
  • Taste and season with extra salt, pepper, or cumin if needed.
  • Serve hot, loaded up with crushed tortilla chips, cheese, and a dollop of sour cream!
  • Extra cozy touch: A little squeeze of fresh lime over the top gives it an exciting twist!
