Cozy Taco Soup Recipe | A Comfort Food Favorite

Today, I’m sharing a recipe that feels just like home in a bowl: Cozy Taco Soup.
This soup is easy, filling, full of flavor, and the perfect thing to whip up when you want something hearty but don’t want to spend all day in the kitchen.

You probably already have most of the ingredients in your pantry!
And if not, the shopping list is super simple (plus… who doesn’t love a good excuse to grab a bag of tortilla chips?).



This recipe is perfect for a day like today, rainy and cold.

Jenn’s Cozy Taco Soup Recipe

Ingredients:

  • 1 pound ground beef (or turkey)
  • 1 small onion, diced
  • 1 clove garlic, minced
  • 1 can diced tomatoes (14 oz)
  • 1 can corn (14 oz)
  • 1 can black beans (14 oz)
  • 1 can pinto beans (14 oz)
  • 1 packet taco seasoning
  • 1 jar chunky salsa (about 1/2 cup)
  • 3 cups beef broth
  • 1 teaspoon cumin (optional)
  • Salt and pepper to taste
  • Crushed tortilla chips, shredded cheddar, and sour cream for topping

Directions:

  1. In a large soup pot, brown the ground beef with the diced onion over medium heat.
  2. Stir in the minced garlic and taco seasoning. Let it cook another minute or two.
  3. Add the diced tomatoes, corn, black beans, pinto beans, salsa, and broth.
  4. Stir everything together and bring it to a gentle boil.
  5. Reduce the heat and let it simmer uncovered for about 20 minutes, stirring occasionally.
  6. Taste and season with extra salt, pepper, or cumin if needed.
  7. Serve hot, loaded up with crushed tortilla chips, cheese, and a dollop of sour cream!

Extra cozy touch: A little squeeze of fresh lime over the top just makes it sing.


Serving Ideas:

This soup is a meal all by itself, but you could also serve it with:

  • Grated Chedder Cheese
  • Mashed Avacado
  • Sour Cream
  • Totilla chips
  • Green Onion Chopped
  • Lime

Instructions
